This is Pioneer Dad’s “go to” chicken marinade for outdoor grilling. It is quick to prepare and most kitchens will have these ingredients on hand. This is a marinade recipe that has become so popular it grown beyond friends, neighbors and family. Who’s left you ask? My barber, mechanic and virtually any guy that starts up a conversation about grilling.
This is a versatile marinade that works equally well for chicken, beef or fish.
I can’t claim complete credit for this recipe. Chef Shawn of Surfside Pizza, in Morro Bay, California created a similar marinade for his grill. Surfside Pizza is a small, intimate pizzeria with the best Italian style pizza anywhere. If you are touring the central California Coast, it’s a great choice for lunch or dinner.

1 Cup Soy sauce
1 Cup Olive oil
1/2 Cup Water
2 Tbl. Chopped garlic, 2-3 cloves
2 Tbl. Dried thyme
2 Tbl. Dried rosemary
When using dried herbs, combine the herbs with a pinch of sea salt in a mortar and pestle, grind into a powder (optional suggestion). Salt and pepper to taste. Let the marinade sit for 30 minutes to combine the flavors.
3. Chicken marinade variations
Fresh herbs are preferred whenever available. If using fresh, increase herb quantity four times (x4). Substitute oregano for either the thyme or rosemary for a slightly different flavor.
